Cortegana's 50% or 75% Iberian acorn-fed ham is one of the most precious pieces that come out of its cellars and natural drying rooms. A gourmet product that has met all the requirements for breed selection, ham weight and minimum curing period to obtain its quality certificate.

The Iberian acorn-fed ham 50% or 75% of the Iberian breed is made with Iberian pigs that have been fed with acorns and pastures outdoors during the montanera, a period of time in which Iberian pigs feed on acorns in the pasture Its curing time is 24 months where it has matured to develop its characteristic flavor and aroma and has a minimum weight of 7kg as required by the Iberian Quality Standard to obtain the red tag.

Also known as the fattening period, the montanera is the final phase in the raising of the Iberian pig in the wild where it feeds on the acorns of holm oaks and cork oaks from the pasture. The montanera period usually runs from October or November until March of the following year.
