According to Royal Decree 4/2014, all hams and shoulders must have a seal or tag that certifies them as Iberian and, depending on the color, their category or quality.

3.- Red Tag: Iberian 50% or 75% Acorn-fed

3. Differences between boneless and sliced Iberian ham?
- Boneless: vacuum-packed ham in one piece free of bones, rind and outer fat that surrounds it
- Sliced: cut sliced and vacuum packed, normally in 100g sachets

In both cases there is a loss of approximately 50%. on the total weight of the ham and usually has a surcharge in the price for the preparation service provided.
